Anti-Inflammatory Pineapple Ginger Smoothie

This smoothie is sure to help ease symptoms of inflammation! If you rather yourself a cool treat for these hot summer days, just freeze the pineapple and mango before blending!

Pineapples contain bromelain enzyme which is a powerful anti-inflammatory (read all about it HERE). Ingredients:
- 2 cups ripe pineapple
- 1 cup ripe mango
- large knob of ginger (about 2-4 inches)
- 1 cup young thai coconut water (you may add the coconut meat too from inside the coconut if you please)
- 1 tsp. fresh vanilla

Blend all ingredients for 20-30 seconds and enjoy!

  3. Mango is one of my favorite fruits to use in smoothies...it makes them so creamy! I love the addition of mango puree on top, it gives it such a pretty punch of color!
